ABOUT THE WINE
This wine looks a little murky in the glass, does throw a bit of sediment (sometimes) and always look better with a bit of air and served at appropriate temperatures with the right food and company. The wine has a personality, a little different to the polished norm. Once you’ve tried it, you’ll not go back to the polished wines of before. Becoming mates at school, the two guys who form Behn Payten & Troy Jones have a fun relationship built on trust and years of experiences. Today, this has led to them making small batches of slightly edgy wine from the Yarra Valley. Believing that if you take out too much, you can take the soul of a wine away, they make sure the wines are made with minimal cleaning up.
The Yarra Valley is home to more than 80 wineries, ranging from small, family-owned operations to large estates. It produces some of Australia’s finest pinot noir, sparkling wine and other cool-climate wines. One of Australia’s finest cool-climate wine regions, The Yarra Valley has become a tourist-hot spot thanks to its short distance from Melbourne and its stunning scenery and top quality wine. Home to some of the country’s most iconic wine producers, The Yarra Valley is a special place. From the elegant Cabernets and Syrah’s that populate the ‘Valley floor’, to the complex versions of Chardonnay and Pinot Noir that thrive on the higher climes of the Yarra, the region is incredibly diverse and represents so much of what is great about the Australian wine scene today.
Sangiovese pairs with a wide range of foods because of its medium weighted body and savory character. Use Sangiovese’s savory as a congruent flavor with herbs and tomatoes. This technique will actually bring out more fruity flavors in the wine. A Sangiovese with high tannins will work perfectly with rich roasted meat, cured sausages and hard cheeses.
